Code the trials and record which change belongs to each recipe. Compare aroma, sweetness, aftertaste and texture at the same temperature and in similar portions. Changing several variables at once can make it harder to identify why a result improved or deteriorated. Assess retained samples under the agreed storage conditions as well as at the first tasting. Final approval should consider the preferred flavor, acceptance criteria and behavior in the chosen package together.
Monitor grinding of the peanut base and protein dispersion. Use pilot trials to assess flow and fill-weight consistency.
Plan cross-contact controls for peanuts and protein ingredients. Define ingredient intake analysis, oil separation and shelf-life checks for the product.
Choose protein sources alongside their effects on flavor and consistency. Develop the target protein level in samples; confirm a high protein claim only after final nutrition values and target-market requirements have been checked.
