Start with where and how the product will be eaten. Breakfast use, an on-the-go snack and a professional kitchen do not necessarily need the same texture or portion. Explain what you like in a reference product, which ingredients you want to exclude and your target price range. Separate the first order quantity from the annual sales forecast. This makes it possible to assess a sample against its sales channel and manufacturing needs as well as its taste.
Include almond allergens, ingredient freshness and oxidative stability in the control plan. Consider packaging protection from light and oxygen.
