Balancing flavor and texture

Assess sweetness, fat phase, particle structure and spreadability together. Compare samples for flavor, consistency and storage behavior before selecting the final recipe.

How should samples be compared?

Code the trials and record which change belongs to each recipe. Compare aroma, sweetness, aftertaste and texture at the same temperature and in similar portions. Changing several variables at once can make it harder to identify why a result improved or deteriorated. Assess retained samples under the agreed storage conditions as well as at the first tasting. Final approval should consider the preferred flavor, acceptance criteria and behavior in the chosen package together.

Ingredients, processing and filling

Assess how processing temperature and mixing affect color and aroma. Plan filling around pack size and intended use.

Control and traceability

Track pistachio origin, batches, ingredient analysis and allergens. Include light, oxygen and storage conditions in quality planning.
