Start with where and how the product will be eaten. Breakfast use, an on-the-go snack and a professional kitchen do not necessarily need the same texture or portion. Explain what you like in a reference product, which ingredients you want to exclude and your target price range. Separate the first order quantity from the annual sales forecast. This makes it possible to assess a sample against its sales channel and manufacturing needs as well as its taste.
Verify protein-source allergens and nutrition values. Include texture changes, oil separation and packaging compatibility in shelf-life studies.
Choose protein sources alongside their effects on flavor and consistency. Develop the target protein level in samples; confirm a high protein claim only after final nutrition values and target-market requirements have been checked.
