Flavor and bite texture

Balance the binder, moisture and protein or cereal particles. Compare samples for hardening, crumbling and stickiness during storage as well as initial taste.

How should samples be compared?

Code the trials and record which change belongs to each recipe. Compare aroma, sweetness, aftertaste and texture at the same temperature and in similar portions. Changing several variables at once can make it harder to identify why a result improved or deteriorated. Assess retained samples under the agreed storage conditions as well as at the first tasting. Final approval should consider the preferred flavor, acceptance criteria and behavior in the chosen package together.

Mixing, forming and portioning

Trial mixing, forming and cutting while monitoring stickiness and release behavior.

Control and traceability

Assess stone fragments, foreign bodies, water activity, microbiology and packaging compatibility.
