Ingredients, processing and filling

Plan ingredient intake, mixing order, refining, temperature and filling checks around the approved specification. Review pilot findings before scaling production.

From pilot trials to repeatable batches

Approval of a small sample does not automatically establish performance at production scale. Record ingredient addition order, processing time, temperature and behavior in the equipment during trials. Compare pilot and production samples under the same conditions and define acceptable differences in the product specification. When an ingredient, recipe or package changes, identify which trials need to be repeated. Approval then rests on a traceable standard rather than a single tasting.

Balancing flavor and texture

Develop the balance of hazelnuts and added protein alongside sweetness, cocoa and fats. Compare different protein sources in samples.

Control and traceability

Address hazelnut allergens together with those from the protein source. Assess nutrition analysis, oxidation and storage-related texture changes.

No added sugar

A no added sugar recipe needs a new balance of sweetness, bulk and texture. The term does not mean sugar-free; naturally occurring sugars may remain. Verify ingredients, nutrition analysis and target-market labeling requirements against the final product.

What changes in a no added sugar project?

Removing sugar from a standard recipe alone is not enough to preserve the same flavor and texture. Evaluate sweetness, solids balance and aftertaste in separate trials, and identify any alternative ingredients clearly. This option should not automatically be treated as low calorie or suitable for every consumer group. The product name and pack statements need to remain consistent with the final ingredients and verified nutrition values.

High protein

Choose protein sources alongside their effects on flavor and consistency. Develop the target protein level in samples; confirm a high protein claim only after final nutrition values and target-market requirements have been checked.
