## Mischen, Formen und Portionieren

Rohstoffannahme, Mischen, Formen und Schneiden richten sich nach der Rezeptur. Backen, Kühlen und Überziehen werden bei Bedarf erprobt.

## Vom Pilotversuch zu gleichbleibenden Chargen

Ein freigegebenes Kleinmuster gewährleistet nicht automatisch dasselbe Ergebnis im Produktionsmaßstab. Zugabereihenfolge, Verarbeitungszeit, Temperatur und Verhalten in der Anlage werden bei den Versuchen dokumentiert. Pilot- und Produktionsmuster werden unter gleichen Bedingungen verglichen; zulässige Abweichungen gehören in die Produktspezifikation. Ändern sich Rohstoff, Rezeptur oder Verpackung, wird festgelegt, welche Versuche erneut erforderlich sind. Die Freigabe erhält damit eine nachvollziehbare Grundlage über die erste Verkostung hinaus.

## Geschmack und Biss

Fruchtpaste, Stücke, Säure und Feuchte werden ausgewogen kombiniert.

## Kontrolle und Rückverfolgbarkeit

Steinreste, Wasseraktivität, Mikrobiologie und Verpackung werden berücksichtigt.
